Xanthan Gum

Stable thickening that keeps mixes from separating.

Stable thickening that keeps mixes from separating.

What it is

A gum made by fermentation of sugar. It thickens cold or hot and tolerates salt, acid and heat.

What it does

It builds viscosity that thins while being pumped or poured and recovers at rest, so it keeps fats, water and solids from separating. It works strongly with locust bean gum.

Where it’s used

  • Wet food: gravies, sauces and loaves; works with locust bean gum for gel texture.

  • Treats: binding in soft treats and fillings.

  • Supplements: suspension in liquids and pastes.

  • Livestock feed: suspending agent in liquid feeds.

  • Dry food: not typical.
