Tapioca Starch
What it is
Starch from cassava root. It is available unmodified, as a modified cook-up starch, and as an instant starch, so one source can cover several jobs in a grain-free line.
What it does
Tapioca gelatinizes at a lower temperature than corn and gives a clean, neutral flavor with a smooth, slightly elastic texture. In kibble and treats it supports expansion and binding without grain on the label. The modified forms hold gel and gravy body in wet food the same way a modified corn starch does.
Where it’s used

Wet food: gravy, gel and loaf texture (modified forms).
Treats: soft chews, chewy and dental-style treats, grain-free biscuits.
Supplements: carrier and binder in soft chews.
