Polydextrose
What it is
A soluble fiber built from glucose. It looks and handles like a sugar powder, but adds very few calories and almost no sweetness.
What it does
It replaces some of the bulk and water-holding that sugar provides, so you can cut sugar and calories in a soft treat without the texture falling apart. It also counts toward fiber content.
