Builds gel strength and freeze-thaw stability with other gums.

What it is

A gum from the seed of the carob tree.

What it does

On its own it binds water and adds body. Its real strength is in combination: with carrageenan or xanthan it builds firmer, more stable gels that hold up to freezing and thawing.

Where it’s used

  • Wet food: gel strength in jelly and loaf products; freeze-thaw stability.

  • Treats: frozen and refrigerated treats and toppers.

  • Supplements: thickener in pastes.

  • Dry food and livestock feed: not typical.
