Glucose Syrup (Corn Syrup)
What it is
A thick liquid made by breaking corn starch down into a mix of sugars. It comes in several conversion levels: lower levels are thicker and less sweet, higher levels are thinner, sweeter and brown faster.
What it does
It ties up water, which lowers water activity and keeps a soft treat soft and shelf stable. It binds doughs and jerky-style products, gives a glossy surface, and browns in the oven for color and roasted flavor.
