Suspends particles and sets gels at very low use rates.

What it is

A gum made by fermentation. It comes in two types: one sets firm and clear, the other soft and elastic.

What it does

At very low levels it forms a fluid gel that holds pieces, herbs or inclusions evenly in a broth or gravy without making it thick. At higher levels it sets firm gels that hold up to heat.

Where it’s used

  • Wet food: suspension in broths, gravies and pourable toppers; gel in chunk-in-jelly.

  • Treats: gel and jelly-style treats.

  • Supplements: suspending agent in liquid supplements.

  • Dry food and livestock feed: not typical.
